This is a heritage bread, a bread like our grandmothers used to make, a wheat bread with finely cracked whole wheat pieces. It’s an intriguing, premium bread with the right mixture of whole wheat and bread flour. You’ll fall in love with this bread and its healthy goodness.

Unlike many other cracked wheat breads, it doesn’t have hard pieces of chopped grains but rather soft, chewy nuggets. Our secret is that we used a softer grind. Baking softens the tiny grain pieces. Even your kids will eat this bread.

Your Questions

• What makes this bread so good? The basic recipe is a really good recipe with better ingredients.  The flour is milled by General Mills in Montana. We’re 93 miles from the Montana border. 
• What else? The cracked wheat and milk.  It costs more to make bread with milk, but it sure makes better bread. The lactose in the milk makes the bread softer and sweeter. 
• What about the cracked wheat? That’s fun! They’re chewy little pieces, not hard. If the pieces are too big, they don’t get soft.  These are perfect. It gives it an almost texture.
• Anything else? It’s fresher. Flour is packaged in paper bags. We get our flour weekly. Then we get it out of the paper and into the mixes and Mylar bags right away. That helps.
• Those sandwiches look really good. What makes this a sandwich bread? It’s moist and wholesome and holds together well.  You’ll like it. It’s a bestseller.
• What else makes this bread different?  The preservatives. We hate preservatives. So, we don’t use any. It’s a healthier product.
• Well, how long will my bread last? The mix will last a long time. Most mixes will last a year or more. Once baked, use it within four or five days.  If you need it to last longer than that, freeze part of your loaf.

Tuna is a great choice. I recommend albacore, well drained, and mixed with low-fat mayo–I prefer avocado mayo.  If you make it with relish you naturally reduce the amount of mayo you use. Try adding sweet chili sauce to increase the flavor.

To upgrade your sandwich again, try chicken salad instead of tuna salad. You can use chicken-in-a-can.

How to Elevate Your Fish Sandwich 

Instead of tuna, make the sandwich above with a cold salmon fillet.  Crumble the fillet and add a bit of tartar sauce instead of relish and a squeeze of lemon juice. 

Instead of pickles, add cold cucumber slices. This is a restaurant-grade fish sandwich that is good and good for you.
