I love sweet potatoes. A rep for a national food distributor introduced these to us. They sold these to a major restaurant chain. They were good. We just thought we could make them better.
We added a touch of maple, more cinnamon, and then some really good cinnamon chips. With a sweet potato base, the cinnamon chips took them over the top. Â

- Do you make these just like regular pancakes? I do, and the directions from the producer of the base mix do. Sweet potato flour won’t hold together as well as wheat flour, but it is close enough. Let them cook till the batter starts to set, and then turn them carefully with a wide spatula.
- I’m not sure I’m a “careful cook.” am I going to have trouble? Do what my sweet wife does. She adds an egg or two to almost every pancake batter. It’s not necessary but eggs do hold the batter together.
- Tell me about the cinnamon chips. That’s the secret weapon. Cinnamon chips make everything better. It’s a cinnamon sugar mixture in cinnamon chips–like chocolate chips. They melt on the griddle with a burst of cinnamon in every bite. It’s like adding chocolate chips to your cookie recipe.
- What about the maple? Am I going to taste the maple? Yes. Maple is a stronger flavor than cinnamon so it holds it’s own against the dominant cinnamon.
- Are my kids going to like these? They’ll fall in love. You won’t be able to make these fast enough.
- Do I put maple syrup on these? Yep. If you really want to go to town, use Maple Buttermilk Syrup. An alternative is to use Old Fashioned Buttermilk Syrup. It’s more of a caramel syrup without maple flavor. Your family will love either.
